Kitcharee with Curry Sauce

A delicious one-pot meal that is both nutritious and balancing for Vata, Pitta, and Kapha. This dish is adapted from the amazing cookbook, Eat, Taste, Heal by Chef Johnny Brannigan.

You Will Need:
3 Cups of Water
1 Cup White Basmati Rice (pre-soaked and rinsed)
1/3 Cup Split Mung Bean (Pre-soaked and rinsed)
1 Cup Sweet Potato (1/2 inch cubed)
1 Cup Zucchini (1/2 inch sliced)
3 Tbs. Sunflower Seeds
1 Tbs. Ghee (How to Make Ghee)
2 tsp Braggs Amino Acids
1/2 Cup Coconut Milk
